OFFIDA PECORINO
Appellation d'Origine Contrôlée
The autochthonous grape Pecorino - recovered in the mountainous inland where
low yield had confined it - was given the AOC in 2001, thanks to its high
qualities brought back to light by research and passion. Ciprea originates
from a find: a homage paid to the Piceni civilization and to the use of
shells as decoration.
SENSORY ANALYSIS
Brilliant colour with greenish highlights. A complex bouquet where the
perfumes of yellow fruits and sage predominate.
Evolution in the glass is slow and progressive, while aerating has mineral
nuances come to the surface. With a full palate persisting to an elegant
finish, this wine is characterized by well-balanced, fresh acidity. Good
aging capability.
GRAPE VARIETIES: 100% Pecorino.
AVERAGE AGE OF VINEYARDS: 13 years.
SOIL: medium-textured, verging on clayey.
VINE TRAINING TECHNIQUE: Guyot.
YIELD PER HECTARE: 65 HL/ha.
HARVESTING: handpicking in crates with selection of grape bunches
in the first days of September.
VINIFICATION: short term skin-contact maceration is followed by
fermentation in stainless steel vats. The wine is then allowed a long
refining process on fine lees until the following spring.
ALCOHOL: 13.00% Vol.
IDEAL TEMPERATURE: 10°C - 12°C.
PACKAGING: 6/75cl bottles (weight 8.7 kg).
