Typical Geographic Indication
Ver Sacrum was the name Piceni's ancestors, the Sabini,
gave to their sacred spring - periodical migrations towards new territories,
led by a totemic animal (wolf, bear, and woodpecker for the Piceni), that
avoided the menace of a "population explosion". This wine, obtained
from Montepulciano grapes exclusively, expresses a robust yet enveloping
character, where strength, elegance and complexity combine in the total
absence of wood.
A wine with a very intense, almost impenetrable ruby colour. The concentrated
flavours recall cherry, blackberry and prunelle notes, with an undertone
of liquorice. Full-bodied on the palate, the wine shows has an enveloping,
marked tannic character. It culminates in a long, lingering finish.

AVERAGE AGE OF VINEYARDS: 35 years with southern- easternexposure,
250-300 m height
SOIL: medium-textured, verging on sandy.
VINE TRAINING TECHNIQUE: Double Guyot.
YIELD PER HECTARE: 45 HL/ha.
HARVESTING: second ten days of October, with handpicking in crates
and selection of bunches.
VINIFICATION: fermentation and maceration for 16 days.
REFINING: in cement casks.
ALCOHOL: 14.00% Vol.
IDEAL TEMPERATURE: 16°C -18°C.
PACKAGING: 6/75cl bottles (weight 8.7 kg).
